Fill Your Breakfast Bowl With Vegetables

We try to eat at least five healthy servings of fruit or veg, every day (more if we can). And we love the idea of starting the day as we mean to go on - by adding our favorite, low-carb 'riced veg' to some dairy-free yogurt, and mixing it up with whatever fruit and nuts we have in the kitchen.

Ingredients (For 1 Serving)

  • 3-4oz Vegi Rice, 100% Sweet Potato
  • 4oz Dairy-free Yogurt (we love Coconut or Soy yogurts)
  • 2 tbsp Stewed Fruit (pre-made)
  • Handful of Fresh Blueberries
  • Handful of Pomegranate Seeds

Here's an idea

This recipe is just an example. If you don't like berries, why not try crunchy, chopped apples with cinnamon; mango and fresh lime or mixed nuts and seeds?

How to make it

For The Bowl

  1. Fill a bowl with 4oz of Dairy-Free Yogurt
  2. Pour away any moisture from the pouch of Sweet Potato Rice and add this to the bowl
  3. Top with Stewed Fruit and fresh Blueberries. Then sprinkle the pomegranate to finish

Here's an idea

A generous helping of Almond Butter goes great with earthy sweet potato.
