Low-Carb Arancini Balls Made With Cauliflower Rice

This quick recipe would also work nicely with other Fullgreen Cauli Rice varieties – Try it with Fullgreen’s Cauli Rice, Cauliflower with Tomatoes, Garlic & Herbs for added flavour and stuff with a filling of your choice (peppers or sundried tomatoes would be a nice addition).

Ingredients (2 Servings) Makes 6 Arancini Balls

  • 1 x 7oz Pouch of Cauli Rice, 100% Cauliflower
  • 3oz Parmesan
  • 1 Large Egg
  • Panko Breadcrumbs
  • Oil (Rapeseed)
  • Seasoning (Salt & Pepper)

How to make it

  1. Place the Cauli Rice in a dry frying pan along with some grated Parmesan (about 4-5 tablespoons) and seasoning.
  2. Heat through for about 5 minutes until the cheese has melted. Keep stirring so it doesn’t stick to the pan.
  3. Crack the egg into a bowl and whisk.
  4. Place the breadcrumbs in a separate bowl.
  5. Allow the Cauli Rice mixture to cool before taking a tablespoon of the mixture and rolling into a ball using your palms. Press together so it forms a tight ball.
  6. Heat up a frying pan with oil until the base of the pan is covered.
  7. Place the Cauli Rice ball into the egg, then roll in the breadcrumbs.
  8. Place into the hot oil and cook on each side for around 1-2 minutes. Keep turning so all sides get nice and brown.

Serve

  1. Serve with a homemade marinara sauce or shop bought pomodoro sauce and plenty of grated Parmesan.
