A Mouth-Watering, Meatless Quarter-Pounder

When we crave a man-size burger, this quick and easy recipe is the one we reach for. There's no compromise on flavour, speed or satisfaction. It's the reason we love ‘Meatless Monday’ and every other veg-filled day of the week.

Each patty is packed with wholesome ingredients: Fullgreen’s Cauli Rice With Cauliflower & Broccoli, mushrooms, chickpeas and fresh herbs. How you build your ultimate burger is entirely up to you. Add slices of juicy tomato, onion rings, melted cheese… maybe another burger...

Ingredients (For 4 Servings)

Veggie Burger Patties

  • 1 x 200g Pouch, Cauli Rice, Cauliflower & Broccoli
  • 3 tbsp Gluten-free Flour
  • 150g Chickpeas
  • 100g Chestnut Mushrooms
  • 1 Large Onion (1/2 Diced, 1/2 Sliced)
  • 1 Clove Garlic (Crushed)
  • 1/2 tsp Cayenne Pepper
  • Handful Fresh Coriander
  • 2 tbsp Olive Oil (for the Patty Mix)
  • 1 tbsp Olive Oil (for Frying)

How to make it

  1. Sauté Onion and Garlic in a little Oil until soft
  2. Clean and chop the Mushrooms. Then add to the Onion and Garlic and sauté for a further 5 minutes, until golden brown
  3. In a food processor, blitz the Chickpeas adding the Olive Oil as you go
  4. Once coarsely chopped (not completely smooth!) remove from the food processor and set aside
  5. Place the Onions, Garlic, Mushrooms & chopped Herbs into the food processor and pulse until the mushrooms have broken down into small pieces
  6. Add the chopped Onions, Garlic and Mushrooms to the blitzed Chickpeas (season with Salt, Pepper and Cayenne to taste) and mix everything together
  7. Take about 1/4 of the Mixture and shape with your hands into a Patty
  8. Add a little Oil to a pan and fry over a high heat
  9. Cook each side of the patty for around 5 minutes, allowing the edges to brown

Here's an idea

If you've made a healthier burger, why not resist adding unhealthy sides? Pop your vegetarian patty into a soft bun, with crunchy lettuce leaves, slices of juicy tomato and a little sauce. Serve with roasted carrot fries and have a chunky slaw.
