The Sweet Potato Challenge

We love sweet potato - it's such a versatile vegetable, so healthy and so tasty. To show you all the amazing things you can create with this oddly shaped wonder of the earth we partnered with online magazine Hip & Healthy to challenge food bloggers to come up with recipes using our Sweet Potato Vegi Rice.

We were blown away by how many wonderful and creative dishes we received, and we'll share those with you soon. For now, here are the 3 winners of the challenge.

Sweet Potato Carrot Cake

Still delicious, still indulgent, but now healthy – This is the classic carrot cake re-imagined! One the most creative recipes we judged and definitely one of the tastiest. This cake uses Sweet Potato Vegi Rice as flour replacement, making it naturally sweet, moist and oh so nutritious! This is what we call perfection.

Ingredients:

For the Cake:

  • 1 pack of Fullgreens Sweet Potato Rice or 1 medium sweet potato minced
  • 2 eggs
  • ¼ cup honey
  • ¼ cup (15g) ground almonds
  • ¼ cup (20g) coconut flour
  • 1 tsp vanilla extract
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp sea salt
  • 1 grated carrot
  • ⅓ cup (20g) mixed dried fruit

For the Frosting:

  • 1 cup (175g) Quark or Natural Yoghurt
  • Juice of ¼ Lemon
  • Tbsp Protein Powder (optional)
  • Handful of chopped Walnuts

Method:

  1. Preheat the oven to 180°C and line the base of a cake tin or baking tray with parchment paper
  2. Combine all the ingredients for the cake in a blender except for the fruit and grated carrot and blend until a smooth batter is formed.
  3. Mix in the carrot and the raisins to the batter.
  4. Pour the batter into the prepared tine and bake for around 30 minutes until springy to touch and golden brown on top. Remove from the oven and place on a wire rack to cool.
  5. While the cake is cooling, combine the quark, protein and lemon juice for the frosting.
  6. Once the cake is cooled top with the frosting and sprinkle with some chopped walnuts.
  7. Enjoy!

Sun dried Tomatoes, Kale & Feta Muffins

These muffins will get your tastebuds dancing with the sweetness of tomato and saltiness of Feta cheese. A healthy snack that will keep you satisfied for longer with slow releasing carbs from Sweet Potato. Plus, using Vegi Rice means it’s that much quicker to whip up! Great as a savoury snack to share with your friends and family (but we suspect you’ll probably want to keep them all to yourself!)

Ingredients:

  • 1.5 cups organic rolled oats
  • 1 pack of  Fullgreen Sweet Potato Vegi Rice
  • 1 finely chopped onion
  • 1 cup finely chopped kale
  • 2 tsp hemp protein powder
  • 1 Tbsp tomato paste
  • 100g sun dried tomatoes, chopped
  • 100g roughly pulsed cherry tomatoes
  • 3/4 tsp sea salt
  • 80g crumbled feta cheese for the batter + 20g for sprinkling
  • 25g chopped basil
  • 50g pitted black olives (optional)
  • 2 eggs
  • 2 Tbsp olive oil

Method:

  1. Line a muffin baking tin with paper cupcake cases
  2. In a large bowl, mix the oats, Vegi Rice, chopped onion, chopped kale, hemp protein powder, tomato paste, chopped sun dried tomatoes, cherry tomatoes, salt, feta cheese, basil, and black olives (optional)
  3. Crack 2 eggs into a bowl, add olive oil and whisk
  4. Add this to mixture and combine well. Allow it to sit for a few mins so the oats soften
  5. Spoon evenly into cupcake cases, nestle in a halved cherry tomato and sprinkle over the remaining feta cheese between the 12 cases
  6. Bake for 20-25 mins on the middle shelf of an oven set to 190°C
  7. Allow to cool slightly before moving the individual cases to a cooling wrack

Kale & Sweet Potato Summer Salad

Summer calls for fresh, easy, colourful dishes, so this one’s a winner! A tasty salad and salsa for the whole family to dig in, packed full of fiber, antioxidants and tasty nutritious vegetables, which is what we’re all about. So quick to make, it’s perfect to take to the park on a picnic with the family or as a side for your garden barbecue.

Ingredients:

Salad ingredients:

  • 1 pack of Sweet Potato Vegi Rice
  • ½ bag of kale
  • 3 Tbsp lemon juice
  • 1 can kidney beans, drained and rinsed

Salsa ingredients:

  • ½ red onion, chopped
  • 10 cherry tomatoes, quartered
  • Handful of coriander, chopped
  • 1 tsp lemon juice

Additional ingredients:

  • 2 chicken breasts, grilled and sliced
  • 1 avocado, sliced
  • Creme fraiche
  • Tortilla chips

Method:

  1. Remove stems from your kale
  2. Combine the Sweet Potato Vegi Rice (straight from bag) with the kale and kidney beans in a bowl
  3. Add 3 tbsp lemon juice and toss together. Set to the side
  4. Combine chopped red onion, quartered tomatoes, chopped coriander and 1 tsp lemon juice
  5. Mix together until coriander is wet and onions are fully soaked in lemon juice. Set to the side
  6. Plate salad, top with salsa, and add grilled chicken, 1 sliced avocado (or ½ depending how much you want) and a big spoonful of creme fraiche
  7. Grab a few tortilla chips, dig in and enjoy!
