This earthy, nut-filled granola adds a great crunch to your breakfast yoghurt and we've kept it sugar-free, too! Because most of the calories come from healthy nut and coconut oils, it's perfect of your struggling to eat Keto in the morning.

Ingredients (6 Servings)

  • 2 x 200g Pouches, Vegi Rice, 100% Sweet Potato
  • 100g Pecans
  • 20g Sunflower Seeds
  • 2 tsp Raw Coconut Oil (melted)

How to make it

  1. Pre-heat your Oven to 180 degrees
  2. Open the pouch of Sweet Potato Rice and pour away any moisture from the pack
  3. Turn the Sweet Potato Rice out onto a lined Baking Tray
  4. Place the Pecans in a bag and crush them using a Rolling Pin
  5. Sprinkle Pecan pieces and Sunflower Seeds over the contents of the Baking Tray
  6. Melt Coconut Oil in a pan over a very low heat
  7. Pour the melted Coconut Oil over the contents of the Baking Tray and mix well
  8. Bake for 15 minutes (at 180 degrees) then mix again
  9. Return to the Oven for a further 10 mins - or until golden brown
  10. Allow the Granola to cool before transferring to an Airtight Container
  11. Our Sweet Potato Granola will store for up to 5 days

Here's an idea

Serve Sweet Potato Granola over Dairy-Free (Coconut or Soya) Yoghurt, with sliced Bananas, Berries and a little Maple Syrup.
