Low Carb, Indian Pilau Cauliflower Rice

Authentic Indian Pilau spices make this 'riced cauliflower' dish the essential low-carb accompaniment to Curry Night. It also works great with grilled fish, meat, or roasted vegetables. But our favourite way to eat it is cold, as a 'faux-grain' salad - with a light, yoghurt dressing.

Authentic Indian Rice Dish, Without The Rice

This low-carb, lower calorie version of the classic Indian side-dish sings with aromatic spices and is ready quicker than you can order a takeaway. Using Fullgreen's Cauli Rice also means you're adding more veg to your plate and saving a couple of hundred calories compared to traditional Basmati rice.

Ingredients (For 2 Servings)

  • 1 x 200g Pouch, Cauli Rice, 100% Cauliflower
  • Vegetable Oil (we prefer Sesame Oil)
  • ½ Onion, Finely Diced
  • 1 Small Carrot, Finely Chopped
  • 1 Small Pepper, Finely Chopped (any colour will do!)
  • 1 tsp Ground Cumin
  • 1 tsp Ground Turmeric
  • 1/3 tsp Cinnamon
  • ½ tsp Coriander Seeds
  • 1 Clove of Garlic, Crushed
  • 70g Frozen Peas
  • Handful of Sultanas

How to make it

  1. Heat a little Oil in a pan over medium heat and sauté the diced Onion until soft
  2. Add the Carrot and Pepper and continue to cook
  3. Once the vegetables have softened, add all the Spices and Garlic and sauté until they are heated through and fragrant
  4. Add Frozen Peas and Sultanas
  5. To prevent sticking you may want to add a little water
  6. Add 200g of Cauli Rice into the pan and stir until it is coated in the spice mix
  7. Cook for a further 2 1/2 minutes or until properly heated through

Here's an idea

Brown some flaked almonds in an oil-free pan, over a medium heat. When they are lightly coloured, sprinkle them over your pilau rice. They’ll add a bit of crunch and a delicious nutty flavour.
