Comforting, Homemade Belgian-style Waffles

There is nothing more comforting, or decadent, than a stack of waffles, piled high with your favourite toppings. Our sweet potato waffles are crispy on the outside, light and fluffy on the inside. They're also gluten-free and dairy-free!

Even if you don't have a sweet tooth, you need to make room for these in your life. They're just as good with savoury toppings, like poached eggs and avocado. Alternatively, smother them in gravy, as a side to your meal: they're 'waffley versatile'!

Ingredients (2 Waffles)

  • 1 x 200g Pouch of Vegi Rice, 100% Sweet Potato
  • 2 tbsp Gluten-Free Flour (such as Chickpea flour)
  • 1 Large Egg
  • 1 tsp Baking Powder
  • Vegetable Oil
  • Pinch of Salt

How to make it

  1. Open the pouch of Sweet Potato Rice and pour away any moisture from the pack
  2. Add Sweet Potato Rice, Flour, Egg, Baking Powder and Salt to the blender. Blend until smooth
  3. Pre-heat your Waffle-maker and lightly brush (or spray) its plates with Vegetable Oil
  4. Pour a small amount of Batter into the Waffle-maker and cook as recommended: approximately 2-3 minutes (though every waffle-maker will be different)
  5. Don't take them out too early. Waffles are better crispy, and golden, on the outside
  6. Serve them hot with toppings of your choice
  7. Repeat until all the batter is used

These comforting, Sweet Potato Waffles are really versatile. Top them with Avocados and Poached Eggs; Cinnamon-baked Apple, Yogurt and Honey; or maybe even a scoop of ice-cream.
