Ingredients (2 Servings)

  • 1 x 200g Pouch of Cauli Rice, 100% Cauliflower
  • 200ml Coconut Milk
  • A Handful of Fresh (or frozen) Raspberries
  • 4 Small Fresh Figs (around 2 small figs per bowl)
  • 20g Crushed Pistachios
  • 1-2tsp Agave Nectar or Honey (and a little extra to drizzle) (Optional)

How to make it

Rice Pudding

  1. Place the Cauliflower Rice and coconut milk into a non-stick saucepan and mix together.
  2. Cook on a low heat for around 2mins.

Toppings

  1. In a separate saucepan add in the raspberries and agave/honey and simmer on a low heat, stirring along the way. Crush a little with the back of a spoon to create a compote.
  2. Slice up some figs.
  3. Crush some pistachios and sprinkle over.
  4. Drizzle with a little agave or honey (optional).
