Tell us about your weight loss history
I've been heavy set (fat if you will) for the majority of my life. The biggest issue for me was that I found huge comfort in food – and not always the best types of food. My favorite go-to foods were breads, pasta, rice and anything super filling and comforting. At the time I had no clue what moderation meant so I’d dive into big plates, always consuming way more than I needed. At my heaviest I weighed 525 lbs.
Had you tried other forms of weight loss in the past?
I had tried different diets in the last (smoothies, liquid diet, etc) and nothing stuck. I guess I didn't believe it would work, so I didn't put my all into it.
Why do you think keto worked for you?
I did my research and read about keto and sure, I had to give up certain foods, but ultimately I saw I could get results from this. By following a low carb, moderate protein and high fat diet, I could still eat some of the foods I loved without feeling like I was missing out. So I got to work - learning to cook and bake for myself and put my own twist on things. In the first 6 months I had lost around 100lbs and I never looked back. This was it for me.
How did you find the transition to keto?
Any change takes commitment and practice but something just clicked for me. It felt right. The weight started coming off and that encouraged me on to keep going. Almost 4 years later and I’m holding strong with 300 lbs lost. I couldn’t feel better.
Tell us about your favorite meals
The key to keto for me has been learning to cook with the foods I love – creating flavorsome dishes that really drive my weight loss. I cook a lot with beef, good cheeses and easy low carb go tos like Fullgreen Cauliflower rice, low carb tortillas and breads that I can keep in the pantry. These kinds of foods keep my carbs in check but simultaneously fill me up, so I’m not left feeling hungry an hour later.
I found the Fullgreen products really helpful in my journey because I don't have to cut and chop my own cauliflower (super convenient for busy days). Pre-keto, I was a big rice fan, so having these on hand makes me feel like I'm not missing out on the dishes I love.
Learning to cook from scratch was a real game changer for me. I know I can create something delicious that ticks the box on flavor but won’t kick me out of ketosis. That’s pretty empowering.
How has the weight loss impacted your lifestyle?
I’m happier than I’ve been in years, but I’ve also gained a whole new respect for my body and what I can achieve when I put my mind to something. I enjoy working out now as I know how good I feel when I move my body. For me, keto isn’t a diet. It’s a lifestyle. And one that I’m proud to say has totally transformed my life.
